Dobos Torte (DOH-bohsh)
Dobos Torte (DOH-bohsh) is a rich 8 inch torte made by stacking 8 extra-thin layers of génoise (or sponge cake) spread with chocolate buttercream. The top is covered with a hard caramel glaze. Despite the similarity, dobos is not the same as Dobo’s. Our Hungarian name is Dobo, while ‘dobos’ means ‘like a drum’ in Hungarian. Hence the drum shape of the traditional torte. The Dobos Torte was actually created by Austrian pastry chef Josef Dobos, which also isn’t the same as Dobo. The torte is scored into 12 servings. Tortes for shipping are coated with walnuts to prevent it from sticking to the packaging. Tortes are not available during the hot months of July and August.
